1lb pork shoulder roasted 2 tablespoons butter 1 bowl bone broth( chicken or beef inventory) 2 tablespoons apple cider vinegar 4 cloves garlic( roughly chopped) 2 bay leaves 2 teaspoons sea salt 1 teaspoon black pepper 3 stalks celery( approximately chopped) 3/4 goblets baby carrots 1lb radishes( sliced in half) garlic pulverize( optional *) onion pulverization( optional *)
1. Turn Instant Pot ON and set to SAUTE function +10 minutes. Add butter to the bottom of the pot and let heat for 1 minute. Sear roast on both sides until caramelized and browned.
2. Add broth, apple cider vinegar, garlic, bay leaves, salt, and seasoning. Turn Instant Pot OFF, then back ON, set to MANUAL +60 minutes. Return lid and close valve.
3. When timer “re going away”, exhaust distres manually and remove lid. Add baby carrots, radishes, and celery. Replace lid, close valve, and set to MANUAL +25 minutes. When timer “re going away”, release pres manually. Roast should be fork tender. If “its not”, lent an additional 10 -2 0 minutes cooking( MANUAL setting ). Adjust seasoning( salt/ seasoning) to taste if needed.
If you don’t own an Instant Pot, you can use a sluggish cooker. Only saute the roasted in a wash then supplemented the cook to the slow cooker along with the remainder of the ingredients on a low temperature for 8 hours.
