Don’t you hate it when you find a favorite produce at Costco and then they stop deport it? Times ago I discovered fresh mozzarella “pearls” at Costco and used them in a frittata with Mozzarella and Parmesan. But when I couldn’t find those any more I decided this Low-Carb Asparagus and Fresh Mozzarella Frittata with Parmesan better get an update so parties would still want to make it! We exactly use chopped fresh mozzarella segment this time but it was just as tasty.
And it’s Easter Week, and although I’ve previously shared my Favorite Low-Carb and Keto Asparagus Recipes for Easter, this would also be a lovely suggestion for Easter brunch.
